April Bloomfield's Toasts with Ramp Butter and Fried Quail Eggs
These Toasts with Ramp Butter and Fried Quail Eggs from April Bloomfield's A Girl and Her Pig are yet another way to enjoy everyone's favorite fleeting spring vegetable. The butter in this recipe incorporates both the cooked bulb of the ramp and its tender, raw greens into a rich butter dressed up with capers, anchovies, lemon, and chiles.
Spring Ramp and Asparagus Frittata
When you have amazing seasonal produce, a frittata is one of the best, and easiest, ways to showcase it. In this version, fresh-picked asparagus and ramps add a juicy green bite that's as pure a celebration of spring as you can get.
Puffy Ramp Frittata
While at its simplest, a frittata is nothing more than beaten eggs with some mix-ins cooked in a skillet, I like to go the extra mile to make them puffy. Somewhere between a soufflé and a Spanish-style tortilla. Ramps and eggs are also natural partners, and there are few egg recipes simpler for a crowd than a frittata.
Roasted Mushrooms With Bacon and Eggs From 'Downtown Italian'
Gabriel Thompson's recipe for Roasted Mushrooms with Bacon and Eggs, from Downtown Italian, written with Katherine Thompson and Joe Campanale, sounds innocent enough, but comes at you guns blazing, all garlicky, salty, and wild.
Diner-Style Asparagus, Bacon, and Gruyère Omelette for Two
Just as with scrambled eggs, the method by which the eggs are heated and stirred is the primary factor that determines what kind of omelette you end up with. This smoky version, perfect for spring, uses my basic technique for diner-style omelettes with large, tender, browned curds and plenty of space for fillings.
Baked Eggs With Creamy Greens, Mushrooms, and Cheese
Three kinds of leafy greens combine with mushrooms, garlic, leeks, mustard, and spices to form the base for a baked-egg dish that's a bit like an omelette turned inside out. It's an ideal recipe for brunch, or really any meal of the day.
Bacon, Egg and Mushroom Tart
Bacon, Egg and Mushroom Tart made with puff pastry that looks impressive but is actually very straight forward to make! The best part is the cheesy layer under the bacon , egg and mushroom topping. Great for company!
Scrambled Eggs
No one should tell you how to take your eggs. But everyone should know how to make scrambled eggs well! 60 seconds, soft, creamy, custardy. Perfection!
Hangtown Fry Recipe | Sunday Brunch
Any oyster lover's search to eat more oysters in the morning will inevitably lead them to the Hangtown Fry. Traditionally this dish is more of a scramble than an omelet, but when I'm cooking an oyster in the morning already, it seems silly to not toss it in some cornmeal and then gently fry it in bacon fat.
Mushroom and Gruyère Eggs en Cocotte
These easy, individually baked eggs start with a base layer of mushroom duxelles and are topped with a coating of melted Gruyère cheese. The duxelles is made by sautéing minced mushrooms, shallots, and garlic in butter with thyme until they've released all their liquid and then browned and deepened in flavor. A splash of cream adds a silky richness.
There's not really much to say about fried eggs with ramps and morels sautéed in butter (and a little bacon fat), other than that, with the exception perhaps of a perfectly fresh everything bagel with cream cheese, it's my favorite breakfast.

This week, we’re finally taking a look at that most essential of Southern staples, grits with eggs and bacon from My Cousin Vinny. But that’s not all: sweet grits and shrimp & grits are both quite literally on the table! Just make sure they’re not instant if you’re using them as part of your
Avocado Toast With Smoked Salmon, Goat Cheese, and Capers
This bagel-and-lox-inspired open-faced sandwich combines avocado and smoked salmon, cut through with tomatoes, capers, and thinly sliced rounds of red onion. Goat cheese takes the place of cream cheese for extra tang, while a squeeze of lemon juice and a little fresh black pepper bring everything into balance.
Cheesy Grits With Sautéed Ham and Kale
Cheesy grits may be delicious as a side dish, but top them with kale that's been simmered in chicken stock with smoky ham and they become a flavorful, hearty meal. A dash of vinegary hot sauce, and you may never want to eat them on their own again.

The Grey Stuff & Other Hors d’Oeuvres inspired by Beauty & the Beast — Binging With Babish
The 'grey stuff' from Beauty and the Beast has been falsely advertised as some sort of cookies-n-cream abomination, and it's about time we set the record straight. Yes I know that children at Disney World probably don't want to eat chicken liver mousse. Yes I know that it's taking whimsical licens
Savory Oatmeal
Growing up I always hated oatmeal. It's like everything bad about cereal, except hot and worse in every way. But then I made a savory oatmeal, inspired by bacon egg and cheese sandwiches I love and risotto and it changed my mind. Let's get into it.
