This cocktail's deep, nutty flavor comes from Malmsey Madeira, which is the richest, sweetest version of the fortified wine—it tastes a bit like salted caramel and walnuts. The drink is brightened by shaking the Madeira with ice, simple syrup, and fresh lemon juice.

Most of the drinks he covered were ones that were already in regular rotation in New York bars. Here's one of his originals, the Larchmont.
Bamboo
I love well-made vermouth, and this is a good drink to showcase its potential. The Bamboo dates to at least the early 20th century, and unlike most cocktails you come across, it has a more modest payload, being based on equal parts dry vermouth and dry sherry (I like the bone-dry crispness of manzanilla in mine, though you could explore the range of dry sherries with this drink; an oloroso or amontillado could have interesting results).

Following Wednesday's post on the appeal of higher-proof spirits in cocktails, here's a drink that may appear formidable at first glance, but if treated with due respect is as gentle as can be: the 151 Swizzle.

Lucien Gaudin
Introducing the Lucien Gaudin. Named for an early 20th century French Olympic fencer, the Lucien Gaudin starts off in the manner of a Negroni by combining gin with Campari. With the addition of Cointreau and dry vermouth the result is a pleasantly bitter drink that is simultaneously rich and dry--a challenging flavor to create which is all the more enjoyable because of its rarity.
The Dutchess
This cocktail from Theo Lieberman of Lantern's Keep and Milk & Honey in NYC has a heavy pour of Angostura bitters in it, but that doesn't make it bitter. The spice is balanced with bright fruit and rich almond from housemade orgeat.
Gramercy Tavern's Expat
Sometimes on a cold fall evening all you want to drink is a bright, sunny cocktail to remind of warmer days recently passed. This Gramercy Tavern creation draws inspiration from both the classic Hemingway Daiquiri and Audrey Saunders' Old Cuban. It's at once tart and refreshing with a touch of richness from the golden rum.
"We ended up with a perfect compromise between the dryness of the sherry and the richness of the rum," he says. "Toss a little nutmeg on top for garnish and you have winter Tiki. Boom!"
