Balsamic Strawberry Smash
Always looking for ways to bring seasonal finds into my cocktails, I started tinkering with some of my favorite strawberry flavor combinations. The result is a summery take on the classic whiskey smash. Strawberries are muddled with lemon to create a juicy base, then a little strawberry syrup is added for a bit of sweetness and to balance the tartness of the lemon. The balsamic acts as bitters, and then of course a hefty pour of bourbon is added, because what's a smash without the bourbon?
Kumquat and Fennel Smash From Craft
When we mixed this up in the office, AHT editor and photographer extraordinaire Robyn Lee said: "What is that? That looks like a salad..." Appearances aside, it's delicious to drink (and chew.) Be sure to muddle well to make sure the fennel flavor translates into the drink.

Smash
Described by bartender Jerry Thomas in 1862 as "a julep on a small plan," the Smash has all the things I love about a julep, with much less of the hassle. And even better, the smash is flexible: While forests have been decimated to create the paper on which countless screeds concerning the One True Way to make a julep have been printed, the Smash can go whichever way you choose--it's equally good made with bourbon, rye, brandy, or a good aged rum.

A thick, rich, and frothy peach-based lemonade lightly scented with thyme. This is the kind of thing you'd want to add a shot of vodka or bourbon to. At least, I'd want to.
While habit drives many to favor clear spirits over their darker, aged counterparts on hot summer days, this refreshing cocktail featuring grilled fruit and aged Cachaça proves habits are made for breaking.
