Zucchini and Lettuce Soup With Pesto
After coming home to a late-summer glut of garden produce, with a container full of pesto and a pile of zucchini and lettuce at my disposal, I did the only reasonable thing and put them all together. Fried Zucchini with Parmigiano-Reggiano and Lemon from 'Franny's'
Fried vegetables make up a substantial chapter in the new Franny's cookbook. Rather than serving a plethora of deep fried cheese sticks and onion rings dipped in tomato sauce, Andrew Feinberg and Francine Stephens take a lighter approach. The thin batter puffs and turns a light golden-brown, leaving the zucchini tender throughout, yet still bright green within. Freshly ground black pepper, Parmigiano-Reggiano, and a squeeze of lemon are all they need as a finishing touch.
Lemon-Avocado Spaghetti With Shrimp From 'Pasta Modern'
Francine Segan calls the avocado sauce in this dish from her new cookbook, Pasta Modern, a healthy alternative to dairy-based cream sauces, but it hardly tastes like bland diet food. The buttery fruit gets a quick buzz in a blender with plenty of lemon juice, turning velvety thick. It melts into the hot, white wine-scented pasta, adding a flavorful coating to the red onion, and shrimp. A dusting of lemon zest enlivens the dish, making the spaghetti impossible to put down.

Deborah Madison's Cauliflower with Saffron, Pepper Flakes, Plenty of Parsley, and Pasta
Deborah Madison's cauliflower and pasta dish from her new cookbook Vegetable Literacy is a surprise of a recipe. It almost looks like something I'd throw together without thinking, but has a few tweaks that make it stand out from my ordinary dinners. First, she uses what may look like a dangerous amount of red pepper flakes; her scant teaspoon looks menacing compared to my usual pinch or two. Also, she throws in parsley, lots of parsley, in three places--some of it is cooked with garlic to mello...
It was with trepidation that I approached the pasta chapter of Shauna James Ahern's new cookbook Gluten-Free Girl Every Day. Most of the pasta recipes in the book call for store-bought pasta. (She does include one recipe for gluten-free fresh pasta, but doesn't provide an assembled recipe using it.) While I'm sure that gluten-free pasta options have improved significantly since that fateful quinoa noodle disaster, I wasn't sure I wanted to mess up dinner with a poor grocery store choice. Instead, I turned to this recipe for zucchini "noodles." While many may scoff at the idea of replacing carbo-goodness with healthy raw veggies, I find thinly sliced vegetables to be a fine vehicle for pasta sauce, especially one as vibrant and flavorful as Ahern's spinach pesto.
