One-Bowl Gluten-Free Chocolate Cake
After creating a recipe for gluten-free vanilla layer cake, two things came to mind: cake is awesome and I should bake more cake. This time, I thought I'd try a dairy-free chocolate version of the yellow cake I recently made.
Easy Gluten-Free Chocolate Bundt Cake
This chocolate bundt cake follows the inelegantly named "dump cake" method. You dump all the ingredients into one bowl, whisk, and you're done. Be sure to whisk the dry ingredients together before adding the coffee, oil, and eggs. This prevents clumping of the xanthan gum and tapioca starch. An optional chocolate or confectionary glaze finishes it off.

Gluten-Free Tuesday: Mini-Coffee Cakes
Those little cellophane-wrapped Drake's cakes were always my favorite before going gluten-free. Unlike most coffee cakes, which have a dense, heavy crumb, Drake's is light; the texture similar to a moist sponge cake. And that delicate texture proved the hardest part of creating this gluten-free version. But eventually, they came out just right.
Gluten-Free Tuesday: Buttermilk Pound Cake
Since spring hasn't fully arrived in my neck of the woods, strawberry tarts, shortcakes, and other spring-treats aren't coming out of my kitchen. Yet I'm still craving something spring-y. This buttermilk pound cake satisfies my craving. The delicate flavor and lemony icing hints of light spring desserts, while not requiring any unavailable seasonal ingredients. Of course, if berries are in season where you live, serve some with this cake.
Chocolate Cake
A great, everyday Chocolate Cake - the cake recipe I make most often. Tender, moist crumb, truly tastes of chocolate, one bowl and a whisk. Easy & reliable!
Gluten-Free Cornmeal Cake
Lighter than a pound cake, this gluten-free, dairy-free cornmeal cake goes well with just about anything.
Gluten Free Tuesday: Brown Butter Cornbread
My original recipe made a classic skillet cornbread, gluten-free, of course. After taking a look at it, I decided to swap out a couple of ingredients: brown butter replaced flavorless vegetable oil, and brown rice flour replaced white rice flour. I thought the brown butter's nutty-caramel flavor called for just a touch of sweetness, so I added a little maple syrup.
Not only do I prefer the texture of boxed cake, I also love the ease. Open a box, dump in a few ingredients and in two minutes you have batter. Would it be possible, I wondered, to create a homemade, gluten-free, one bowl cake recipe? Turns out, the answer is yes. This cake, which was inspired by the classic gluten-filled Hershey's "Perfectly Chocolate" recipe, comes together quickly. White rice flour, cornstarch, and just a little sweet rice flour combine to create a cake that has a texture that's very similar to boxed cake—only better.
Serve With
Scotch Vanilla Bean Ice Cream
This is everything vanilla ice cream should be: impossibly rich and smooth with deep notes of honey, caramel, and flowers. A good Highland Scotch (I'm partial to Glenlivet 12) brings out the best flavors of vanilla while also adding depth. There's a good amount of salt to keep you coming back for another bite. Add salt slowly and adjust it to your tastes.
Spiced Vanilla Ice Cream Recipe | Scooped
I have long resented the use of the word "vanilla" to mean bland, blah, and boring. Real vanilla is deep and complex. Anyone who thinks vanilla is boring hasn't tasted this ice cream.
Jeni Britton Bauer's Tuscan Sundae
The flavors here are so complementary and play off each other perfectly: the salt and caramelized sugar in the ice cream, the warm honey and Vin Santo sauce—delicious
