Mango-Ginger Cocktail With Cilantro
The round sweetness of mango gets a kick from spicy ginger and tart lemon in this tequila cocktail. If you have it, use reposado tequila, which lends a warm oakiness to the drink, balanced here with a touch of bright, grassy cilantro.
The Wayland's Bermuda Black
If you drink a Dark 'n Stormy and think, "I'd like to turn this up a notch," this is the cocktail for you, courtesy of The Wayland in NYC. Fresh ginger juice adds heat, rum adds richness, and lime juice keeps it bright.
Frisco Sour
A complex rye cocktail in which Benedictine plays a small but delicious role, the Frisco Sour marries the spiciness of rye to the sweet herbal qualities of Benedictine. But because Benedictine's sweetness can so easily overpower other ingredients, it's held in check here by lemon juice. In this dry, bracing drink, rye takes the forefront.
Peppery Ginger Cider
This warm cocktail is spiked with bourbon and ginger liqueur. Cracked black pepper underscores the ginger's subtle burn.
Suffering Bastard
There are a number of recipes for the Suffering Bastard floating about. Some are merely Mai tai variations with extra rum, while some call for brandy instead of bourbon, and others for rum. Today's drink historians generally settle on bourbon as one of the two base spirits, along with a shot of gin. The drink is then leavened with the healing powers of lime juice and bitters (the lime juice can range anywhere from a teaspoon to an ounce) and lengthened with a good dose of ginger ale.
Smoky Iced Tea and Whiskey Cooler
The cocktail is smoky and complex without being heavy. It's got a lightness that comes from the lemon juice and ginger liqueur that make for a dangerously sippable drink.
Sother Teague of Amor y Amargo in NYC shared this rye cocktail with us, and it's a winner, spicy with lots of fresh ginger and bright from a bunch of fresh lime.

The Best Fried Chicken Gizzards
"You can never be surrounded by too many gizzards." More commonly sold than duck gizzards, chicken gizzards are dirt-cheap and wholly delicious. I was first introduced to the glory of Southern fried chicken gizzards at Roscoe's, a chain of chicken-and-waffle...

Red Rooster's Mac and Greens
Marcus Samuelsson's penchant for Southern American-African-Swedish fusion cuisine always makes him an interesting chef to watch. His recipe for Mac and Greens, adapted in Ellen Brown's Mac & Cheese, fits right into his oeuvre. The recipe title is apt, as his mac contains just as much greenery as pasta. Braised collards and bok choy pair perfectly with the gooey cheddar-Gruyère-Parmesan mix, and the hints of soy and coconut lend glutamate-rich depth. But don't be fooled, this is no health food--t...

Favorite Buttermilk Skillet-Fried Chicken from 'Mastering the Art of Southern Cooking
Before last week, I had never made real fried chicken. Between the perceived mess and my worry of serving burnt-but-still-raw chicken, I knew I'd need a commanding voice to guide me through my fears and persuade me to give it a shot. The buttermilk skillet-fried chicken recipe in Nathalie Dupree and Cynthia Graubart's Mastering the Art of Southern Cooking offered just the direction I was looking for.
