MacKinnon
The base for the drink is Drambuie, the Scottish herbal honey-and-whisky liqueur, but before you write it off as too sweet, look at the citrus and soda--that will tone down the sugar a few notches. Plus, there's a slider of rum to help level out flavor, and to bring the horsepower up to the necessary level.
The Jacobean
McCarthy's take on a Manhattan makes use of green chartreuse; "The Jacobeans always sided with the French, so my chartreuse drink is named for them." AnCnoc is stirred with Carpano Antica ("the more savory of the sweet vermouths"), a half-ounce of green chartreuse, and a good measure of ice.
The Arnaud's Special
With the advance of autumn, it's time to break out the dark-spirit drinks suitable to the cooler seasons. The Arnaud's Special is a close cousin to the Rob Roy, and was the house cocktail for Arnaud's Restaurant in New Orleans during the 1940s and '50s.
The McQueen
McCarthy affectionately refers to this one as the "Smoky Smoky," although by my count, you could tack on a few more iterations—smoky smoky smoky? Scotch and Fidencio mezcal blend with dark agave and orange and chocolate bitters, with a spritz of hyper-smoky Ardbeg 10-year, plus a mighty twist of flamed grapefruit.
Auld Draper
Byrrh, a mild apéritif based on red wine and flavored lightly with quinine, gives a rich and spicy kick to this easy-to-make gin cocktail.
Basin Street Blues
This cocktail, adapted from Domenica in New Orleans, is pretty low in alcohol, but not at all low in flavor. It reminds us of caramel and lemon drops, with an essential smoky addition from a few drops of Scotch.
The Devereaux
We've always liked sparkling wine with a splash of elderflower liqueur, but this highball from Freemans restaurant in NYC raises the bar a bit with the addition of Bulleit bourbon and some tart lemon to even it out.
Champagne Cocktail
Bitters and sugar are all you need to dress up a glass of Champagne (even more).
Royal Garland Fizz
Jon Harris of Firefly in Washington, DC was inspired by the tradition of stringing cranberries and popcorn into tree garlands when he created this refreshing and frothy cocktail.
Rob Roy
The simple Manhattan variation is improved greatly with the help of fresh vermouth and a good blended Scotch.
It's a sparkler, but on the dry side, crisp Veuve Ambal brut blanc de blanc with Drambuie (there's the Scotch tie-in), St. Germain (which McCarthy calls "liquid MSG"), and a twist of lemon. Leave the lemon pith side up and it'll bubble effusively for minutes on end.

Glazed Winter Vegetable Medley With Chestnuts and Caper Berries From 'Feast'
The final savory chapter in Sarah Copeland's new cookbook, Feast, focuses on a few larger, celebration-sized meals.
