Scooped: Gingerbread and Trappist Ale Ice Cream
As the temperature drops and New York's skies take on a dignified gray, we've put our window fans away and taken out our fall jackets. Summer may be on the way out, but making ice cream isn't. A new season...
Bi-Rite Creamery's Salted Caramel Ice Cream
[Photograph: Max Falkowitz] The salted caramel ice cream from Bi-Rite Creamery is one of the best I've ever tasted. It's wildly complex, a tad smoky, and just salty enough. Just as important, it's ridiculously creamy thanks to an especially high...
Malted Milk Chocolate Ice Cream
Seek out high quality milk chocolate for this recipe; Valrhona and Callebaut have very good versions. Freezing the malted milk balls before adding them to the ice cream will keep the temperature down and prevent melting during the final minute of churning.
Irish Coffee Caramel Ice Cream with Shaved Dark Chocolate and Candied Pecans
It has buttery, smoky caramel, a dash of coffee grinds, and a generous helping of whisky for good measure. It's a bracing combination, but oh does it work. First you taste the coffee, roasted and rich, with the pleasant bitterness of an actual cup of joe. Then comes the caramel to sweeten things up just a tad, melting to sweet buttery goodness. Then the whisky: the more ice cream you eat, the more you taste it.
Scooped: Duck Fat Caramel Soy Sauce Ice Cream
If this sounds like something up your alley, you can look forward to what may be the richest caramel you will ever eat. Besides adding complex flavor, the duck fat lets the caramel linger on the tongue long after the ice cream is gone. Soy sauce works surprisingly well with caramel, drawing out its buttery qualities.
Boozy Butterscotch Ice Cream
This butterscotch ice cream is sweet and salty with a slight boozy kick.
Buttermilk Ice Cream
This ice cream boasts big buttermilk flavor, but it has a texture that's light and fresh.
Apple Cider Doughnut Ice Cream
When reduced to a syrup, apple cider takes on a tang as pronounced as its sweetness. It plays well here against sweet cream and toasty apple-laced doughnuts.
Maple Rosemary Ice Cream
Use grade B maple syrup if you can; it has a more pronounced flavor that stands up to ice cream all the more. Serve this with warm pears (poached, caramelized, or in cobbler) and some toasted pecans.
Scooped: Apple, Browned Butter, & Sour Cream Ice Cream
The time has come for us to end this ice cream series, October being halfway to Halloween. We wanted something to complement fall's palette of desserts: crumbles, crisps, cakes, and quickbreads, filled with apples, pears, walnuts, and cinnamon. With that in mind, apples and sour cream were a no-brainer, a lusciously tart rejoinder to rustic late-harvest food.
Really good caramel ice cream comes from playing chicken with your sugar. Don't let it intimidate you while melting it; the sugar should be the color of dark stained wood. I let it smoke, then slowly count to 3 before plunging in butter and cream. Those last three seconds are where those beautiful smoky flavors develop.

Pretzel Bao With Sweet Sesame-Hot Mustard Pork
German-Chinese fusion may sound strange, but when pillowy pretzel buns meet bao, and mustard-slathered roasted pork meats char siu, it works. Chinese hot mustard, sesame paste, and honey make a flavor-packed change-up from the traditional char siu sauce, while a special Chinese bread-making trick makes the pretzel buns even more moist and tender. It's impossible not to love this Deutsch version of a Dim Sum classic.

Grilled Bratwurst, Beer, and Cheddar Soup
Rich, hot beer-cheese soup may not sound like ideal summer fare, but this version is made with a warm-weather cookout star—smoky grilled brats—that transform it into a dish that's seasonally appropriate. Flavored with cheddar and spiked with a bit of Velveeta for improved texture, it's my go-to meal when I want a taste of my Midwestern roots.

The Grey Stuff & Other Hors d’Oeuvres inspired by Beauty & the Beast — Binging With Babish
The 'grey stuff' from Beauty and the Beast has been falsely advertised as some sort of cookies-n-cream abomination, and it's about time we set the record straight. Yes I know that children at Disney World probably don't want to eat chicken liver mousse. Yes I know that it's taking whimsical licens
