Roasted Eggplant With Tahini, Pine Nuts, and Lentils
This dish of eggplant roasted until caramelized and tender, served over stewed lentils with an extraordinarily light and creamy tahini sauce and crunchy pine nuts, was dinner and lunch for more meals than I care to count a couple of weeks back. Not that I'm complaining: It's extremely good.

Susan Feniger's Street Food's Romanian Sweet and Sour Eggplant
After it has been reduced to a silky, rich version of its former self, the eggplant spends a quick 10 minutes stewing the tomatoes, sugar, and vinegar. It may not be the sexiest eggplant dish imaginable, but the final salad is certainly a unique take on the aubergine.
Grilled Vegetable and Jasmine Rice Salad With Herbs and Cashews
Inspired by Thai grilled beef salad, this salad replaces the meat with smoky grilled vegetables and adds fragrant jasmine rice. It's loaded with fresh herbs and dressed with a bracing, fish sauce-lime vinaigrette.
The name "Roasted Eggplant and Leek Salad" in Charles Phan's Vietnamese Home Cooking is a bit of a misnomer. Yes, this dish has eggplant and leeks, but no, it is not a roasted salad. (Unless, of course, you count grilling as roasting.) If you happen to live in a wondrous state with no real winter (cough, California, cough), grilling in January is a non-issue. In other parts of the country, however, it may be necessary to bring the dish indoors and under a broiler. Either way, this silky smoky salad should go on your to-make list, stat--soft eggplant meets pleasantly squeaky leeks in a vibrant sauce of soy, chiles, and cilantro. What's not to love?

Garlic and Rosemary Lamb Chops with Honey Cider Glaze
Because of their dainty size, lamb chops make for a great finger food to serve alongside a beer or glass of wine. Each chop provides a succulent two or three-bite serving of lamb—and on top of that, the rib bone makes for a convenient built-in handle. Although corn dogs, kebabs, and satays all make for great bar bites in their own right, there is no other meat-on-a-stick option more elegant than a lamb rib chop.
Lamb Loin Chops with Greek Salad and Yogurt-Lemon Sauce
To stretch this salad into a full meal, I immediately thought of lamb. Though I didn't have time to roast a whole leg of lamb (shame), I did have the eight minutes necessary to cook up these cute little lamb loin chops (which look like miniature t-bone steaks). The yogurt-lemon dressing with feta plays nicely with the lamb, while also adding some creamy and tart notes to the salad.
